With this unbearable heat we’re all looking for quick fixes in the kitchen, preferably ones that do not require the use of a stove or oven. So, I made this really quick and tasty salad that will cure your hunger and beat the heat. Sorry there are no pictures. I was starving and by the time I thought about posting this, the salad was gone :-/ Instead, you get to enjoy this lovely sunset I captured at the beach a few weeks ago.
Ok, so you’ll need:
sliced Heirloom tomatoes
shredded Rotisserie Chicken
Sea Salt (I used my homemade chili citrus salt. Stay tuned for that recipe)
1 tsp White Truffle Oil
Put your veggies in a bowl or on a plate. Top with chicken. Sprinkle seasonings, drizzle oil and squeeze the lemon over the salad. That’s it! Enjoy this recipe and stay cool and hydrated.
