<p>Someone said &#8220;necessity is the mother of invention.&#8221; And they were right. The other day I was craving a B.A.L.T. (bacon, avocado, lettuce, tomato), but didn&#8217;t have avocado or lettuce so I had to improvise, as I often do. I came up with an interesting and very tasty version of my own, substituting Pink Lady apple slices for avocado, winter greens mix (spinach, kale, chard) for lettuce, and goat cheese for mayo on toasted Sprouted Wheat Ezekial Bread. Hence, the B.G.G.A.T was born. . It&#8217;s delish and healthy too! Give it a try.</p>
<p>For you non-pork eaters and vegetarians, of course you can substitute turkey bacon or vegan bacon. Enjoy!</p>

Anywho, I made this incredible salad dressing that I thought I should share. I plated a handful of Arugula with some heirloom tomato slices and drizzled it with homemade Goat cheese and Balsamic Vinaigrette. Talk about waking up the taste buds! It&#8217;s sooooo good. Here&#8217;s what you need:</p>
<p>3 Tbsp. softened Goat Cheese (I used the one with herbs)</p>
<p>1/4 cup good Balsamic Vinegar</p>
<p>1 tsp. honey</p>
<p>Sea Salt</p>
<p>Black pepper</p>
<p>Garlic salt</p>
<p>Mix everything together in a bowl until the Goat cheese is smooth. The dressing will be a rick creamy Espresso color. Drizzle it over the arugula and tomatoes and enjoy!!</p>

So, I made this really quick and tasty salad that will cure your hunger and beat the heat. Sorry there are no pictures. I was starving and by the time I thought about posting this, the salad was gone :-/ Instead, you get to enjoy this lovely sunset I captured at the beach a few weeks ago.<br />
Ok, so you&#8217;ll need:</p>
<p>mixed greens</p>
<p>sliced Heirloom tomatoes</p>
<p>shredded Rotisserie Chicken</p>
<p>Sea Salt (I used my homemade chili citrus salt. Stay tuned for that recipe)</p>
<p>Lemon Pepper</p>
<p>Lemon wedge</p>
<p>1 tsp White Truffle Oil<br />
Put your veggies in a bowl or on a plate. Top with chicken. Sprinkle seasonings, drizzle oil and squeeze the lemon over the salad. That&#8217;s it! Enjoy this recipe and stay  cool and hydrated.</p>

It&#8217;s been so long since I&#8217;ve posted a blog. In fact my last post was right around the time I was apartment hunting which was almost two months ago. I was so stressed out and tired I couldn&#8217;t even think about blogging. But, after a treacherous three month search I am happy to announce I have found the perfect place for me and this Thursday (the 16th) will mark my one month move-in anniversary.</p>
<p>Though I have not been blogging, I have been cooking. A lot! And, lucky for you, I&#8217;ve been keeping a pretty good photo journal of all the delicious meals I&#8217;ve prepared. This week&#8217;s recipe is a Vegetable Medley with Chicken Spinach Sausage from <a href="http://www.moneysaversmeats.com/">Ozabe&#8217;s Money Saver&#8217;s Meats</a> market in South Los Angeles. S/N: If you&#8217;re ever in the LA area, you wanna stop by and give Ozabe&#8217;s sausages a try. They are delish! But, edible flowers aren&#8217;t all that exotic either. In fact, people have been eating flowers for thousands of years. The earliest mention dates back to 140 B.C. Flowers have been used in traditional foods from cultures all over the World. For example, roses and violets were used by the Romans. The daylily is used in some Asian dishes while rose petals can be found in many Indian recipes. The Latin culture created stuffed squash blossoms, which is one of my favorite things to eat. (Filippone, 2007).</p>
<p>As you guys know, I work with <a href="http://rootdownla.org/">RootDown LA</a> who is responsible for installing gardens at various sites in South LA. While I was at one of the sites, <a href="http://ozabesgardenofoz.wordpress.com/">The Garden of Oz</a> at <a href="http://www.moneysaversmeats.com/">Money Saver&#8217;s Meats</a>, I plucked fresh flowers for today&#8217;s recipes which include <a title="Stuffed Squash Blossoms" href="http://tyme2eat.com/recipes/dinner/stuffed-squash-blossoms/">Stuffed Squash Blossoms</a> and <a title="Sauteed Beet Greens with Pea Flowers" href="http://tyme2eat.com/recipes/dinner/sauteed-beet-greens-with-pea-flowers/">Sauteed Beet Greens with Pea Flowers</a>. Yesterday a friend sent me a text asking &#8220;what happened to Tyme2Eat?&#8221; So, I thought I&#8217;d give you guys an update. A lot is happening right now. All good stuff of course!</p>
<p>First of all I&#8217;m apartment hunting, which most of you can attest to how arduous and daunting a task that can be. I found a place I really like and hope to be moving by this weekend if all goes well. While the apartment hunt has monopolized the majority of my free time, I am also heavily involved with my church, <a href="http://www.agapelive.com/">Agape International Spiritual Center</a>, where I sing in the choir.</p>
<p>I&#8217;ve also become more instrumental in my new position as Programs Manager at <a href="http://rootdownla.org/">RootDown LA</a>. A non-profit organization that works tirelessly to educate communities on nutrition, growing their own food and most importantly, getting kids to eat their veggies!</p>
<p>This is unlike any job I have ever had. While most of my past jobs had me suited and booted behind a desk click clacking away on a keyboard, RootDown has me feeling like a kid again. I basically get to work out of the beautiful historical <a href="http://www.oncentral.org/news/2011/06/24/rootdownla-move-historic-ralph-bunche-house/">Ralph Bunche House, </a>play in the kitchen and the garden all day, while teaching children and adults in the South LA community how to make healthy foods taste great!</p>

<p>It is MY DREAM JOB to say the least and there are no limitations on what we can do or how far we can go.</p>
<p>I work with a bunch of &#8220;Yes&#8221; men and women. And not in the way you&#8217;re thinking. They are &#8220;Yes&#8221; people because they believe everything is possible and every idea is a spark of creativity and imagination waiting to emerge as something incredible and beneficial to the planet.</p>
<p>I haven&#8217;t forgotten about my beloved Tyme2Eat.  I am merely expanding my awareness of all the potential outlets the food and farming industry has to offer. And I will be back to posting regularly once everything settles down.</p>
<p>This is just the beginning of what is yet to unfold. So please be patient and stay tuned because I will back with more recipes, photos, videos, gardening tips and even some food products for sale!</p>
